Creole Burgers
1 lb. ground beef
1/2 cup chopped onions
1 can chicken gumbo soup
2 Tbsp. ketchup
2 Tbsp. mustard
1/4 tsp. black pepper
8 split toasted buns
Brown beef & onions in skillet, stirring to separate meat particles. Stir in soup, ketchup, mustard & pepper. Simmer 5 min. Spoon on toasted buns.
Ham Loaf
2 lbs. ground lean pork
1 lb. ground ham
1 egg beaten
1 cup bread crumbs
1/2 cup milk
3 Tbsp. tomato sauce
1/2 tsp. paprika
1/4 tsp. salt
Mix. Bake @ 350 deg. for 1 1/2 hours
Mustard Sauce:
1/2 cup tomato sauce
1/2 cup prepared mustard
1/2 cup vinegar
1/2 cup sugar
1/2 cup margarine
3 egg yolks beaten
Cook in double boiler until thick. Will keep indefinitely in refrigerator.
Hungarian Goulash
2 lbs. beef cut into 1 inch squares
2 Tbsp. butter
2 onions, chopped fine
1 tsp. red paprika
Salt & pepper to taste
1 tomato
1 green pepper
1 cup water
Fry onions in butter until golden brown. Add meat & brown. Remove from flame & add sweet paprika, salt & pepper. Cover & simmer in own juice over low flame for 10 to 15 min. Add tomato & green pepper cut up in small pieces. Add about 1 cup water or enough to make a nice gravy. Cook slowly about 2 hours, until meat is tender. Thicken gravy with 1 Tbsp. flour mixed with a little water to prevent lumping. Serve with noodles.
Lamb Chops with Horseradish Cream
Lamb chops
Mushroom caps
Horseradish Cream
1 Tbsp. flour
1 Tbsp. butter
Paprika
2 heaping Tbsp. grated horseradish
1/2 lump sugar
Onion juice
Beef broth
1/2 cup of cream
Have chops from rib cut rather thick. Pan broil for about 10 min. until nicely browned on both sides. Then put on top of each a heaping Tbsp. horseradish, cream, spread evenly with knife. Place a broiled mushroom cap on each chop. Place in hot oven for 2 min.
Horseradish Cream: Blend flour with butter. Do not brown at all, add paprika, sugar, salt a few drops onion juice, & a little beef broth. Cook 15 min. Then add cream & cook for 10 min. more, stirring to prevent lumping, add grated horseradish & cook 5 min. longer.
Lamb Chops with Vegetables
6 shoulder lamb chops
2 Tbsp. grated onion
1 Tbsp. lard or shortening
2 cups cooked rice
1 can tomato soup
Salt - pepper
1 pkg. frozen asparagus
Have
shoulder chops cut 1 inch thick. Wipe with a damp cloth. Brown onion in
shortening. Add rice, tomato soup & seasoning. Pour into bottom
broiler pan. Arrange asparagus around edge. Place chops on broiler rack
over rice & vegetables. Place in broiler allowing 2 inches between
surface of meat & source of heat. When brown, season with salt
& pepper. Turn & brown other side. Only one turn is necessary.
Approximately 8 to 10 min. to a side is required. Lima beans, corn,
cooked carrots, beets, or any pleasing combination of vegetables may be
used. Cooked spaghetti, macaroni or hominy may take the place of rice.
Meat Balls & Spaghetti
1 1/2 lb. chopped beef
1/2 lb. lean chopped pork
1/2 lb. lean chopped veal
2 eggs
2 Tbsp. grated Italian
cheese
1 cup bread crumbs
Salt & pepper
2 large cans tomatoes
1 medium size green pepper
1 medium onion
6 links Italian sausage,
hot & sweet
2 cans tomato paste
Meat
Balls: Mix meats, eggs, cheese & bread crumbs, add salt &
pepper. Form into meat balls. Saute green pepper, onion & sausage,
add tomato paste & tomatoes. Heat & add meat balls. Cook slowly
2 1/2 to 3 hours.
Mexican Stew
1 lb. chopped chuck or round steak
2 potatoes,
large
2 carrots,
large
2 onions, large
2 green
peppers, optional
1 can tomato
soup
Form meat balls (about 8), place in botton of pot. Slice onions on top,
then carrots on top of onions. Slice potatoes next (1/4-inch thick)
& then peppers. Add enough water to just cover. Use 4-qt. pot.
Place on lid, cook until potatoes are done. Add undiluted soup. Simmer
about 5 min. Excelent heated over.
Pork Chop Bake
6 pork chops, cut 1/2 inch thick
Salt
Lemon
6 Tbsp.
brown sugar
6 Tbsp.
catsup
Put pork chops in shallow pan, salt chops. Top with 1 slice lemon, 1
Tbsp. brown sugar & 1 Tbsp. catsup. Add a little water to pan &
bake 3/4 hour in 350 deg. oven.
Sauerbraten Meatballs
3 slices bread, broken up
3 Tbsp. hot water, mix into bread with fork
1 lb. chopped chuck
1/2 medium onion, chop fine
1 egg
1 tsp. salt
Sauce: 8 ginger snaps broken up
1/3 cup vinegar
1 1/2 cups hot water
10 whole cloves
2 bay leaves
Salt to taste
1 Tbsp. currant jelly
Mix bread mixture with meat, onion, salt & egg, shape into meat balls. Mix sauce ingredients together & pour over meat balls & simmer 1 hour, add small amounts of water from time to time if sauce thickens too much & starts to stick. About 15 min. before serving add 1 Tbsp. currant jelly. Serve with broad noodles. Remove cloves & bay leaves toward end of cooking time.
Swedish Meatballs
1 lb. lean chopped beef
3/4 cup quick cooking rolled oats
3/4 cup tomato juice or skim milk
1 egg
Salt & pepper to taste
1 cup onion soup
Mix
well together all ingredients except onion soup & shape into small
meat balls, about 1 inch diameter. Brown well in hot fat. If an
electric fry pan is used, drain off excess fat, add about 1 cup onion
soup & simmer @ 220 deg. for 1/2 hour or more. If fry pan is not
available, place in a covered pan & simmer or bake at low heat for
1/2 hour more.
Swiss Steak - Tomato Sauce
1 lb. round steak, sliced thin
1 1/2
cup water
1 tsp.
Worcestershire sauce
1 can
tomato sauce
1 bay
leaf
1 onion
Flour
& salt, pepper
Green
pepper
Egg
noodles
Pound flour, salt & pepper into 1 lb. round steak sliced thin. Cut
in 2 inch squares & brown in hot fat. Then add water, tomato sauce,
Worcestershire sauce, bay leaf, onion sliced thin, a few rings of green
pepper. Simmer for 1 1/2 hours or until meat is tender. Serve over egg
noodles.
Baked Crab Meat Royal
1 small can of crab meat, flaked
1 small
green pepper, minced
1 small
can mushroom caps
3 Tbsp.
butter
1 Tbsp.
minced onion
2 Tbsp.
flour
1/2 tsp.
salt
1 cup
milk
1/4 tsp.
mustard
1 egg
Combine butter with onion & minced pepper in double boiler &
cook lightly. Blend flour, salt, milk & mustard, stirring to a
smooth sauce. Add egg, beaten, & cook until a smooth custard. Add
crabmeat & mushrooms. Place in individual buttered molds or shells
& sprinkle with buttered crumbs; brown under broiler.
Lobster Thermidor
2 lobsters, cooked (1 1/2 lbs.)
2 Tbsp.
butter
2 Tbsp.
flour
1/4 tsp.
salt
Dash
cayenne
1 Tbsp.
minced parsley
1 cup
thin cream
Grated
Parmesan cheese
Cut the lobsters in half lengthwise. Remove & cube meat. Saute meat
in butter about 5 minutes, then add the flour, seasoning & cream.
Heat & blend thoroughly. Return the mixture to the lobster shells,
sprinkle with cheese & bake in hot oven about 10 minutes, or brown
under broiler.
Shrimp Casserole
1 lb. shrimps
1 can
mushroom soup
2 cups
noodles
1/4 cup
bread crumbs
Grated
cheese
Cook shrimp & noodles. Make cream sauce & add to mushroom soup,
mix all ingredients together & top with bread crumbs & dot with
butter.
Shrimp Creole
2 Tbsp. butter
2 Tbsp.
flour
1 onion,
chopped
1 green
pepper, chopped
2 cups
cooked tomatoes
1/2 tsp.
salt
1 1/2
lb. cooked shrimp
Melt butter, add onion & green pepper & cook until soft, add
flour, blend. Add tomatoes & salt & cook over slow flame for 20
min. Add shrimp & heat. Serve with rice for 4.
Cantonese Casserole
1 can tuna fish or chicken
1 can
Chinese noodles
1 can
cream of mushroom soup
1 pkg.
cashew nuts
1 cup
celery
1 medium
onion
Saute onion & celery in butter until onion is yellow. Add all
ingredients & put in casserole. Bake 30 min. @ 350 deg.
Chicken & Broccoli Supreme
1 bunch broccoli
2 large
chicken breast
9 Tbsp.
butter
9 Tbsp.
flour
3 cups
milk
1/2 lb.
finely grated cheddar cheese
Cook broccoli until just begins to come tender, not too soft. Drain
well & arrange in bottom of low baking dish. Place on top of this,
slices of cooked chicken breasts, which have been removed from the
bones. Cover chicken & broccoli with heavy rich white sauce made
from the flour, butter & milk, to which has been added the grated
cheese. More or less cheese can be used according to taste. Bake in a
moderate oven until broccoli is tender & all ingredients are heated
through. This is a good company dish which can be prepared well in
advance & placed in the oven shortly before serving time. Serves 4.
Turkey & Rice Creole
2 cups turkey or chicken
1 cup
cold cooked rice
1 cup
canned tomatoes
1
pepper, cut fine
1 Tbsp.
steak sauce
Salt
& pepper
Combine turkey, rice, tomatoes, onion, green pepper & seasonings.
Simmer for 15 min. Turn into greased 2 qt. casserole. Sprinkle 1/2 cup
buttered crumbs on top. Bake 30 min. in 375 degree oven or until brown.
