Tater Tot Casserole

Prep Time: 30 minutes

Cook Time: 55 minutes

Yields: 4-6 servings
Ingredients

    1 lb. Ground Beef
    1.Red onion chopped
    1/2 t Salt
    1/2 t Pepper
    1 T. Dried parsley flakes
    32 oz Frozen tater tots (hashbrowns, nuggets, or real fresh potatoes to your choosing)
    2- 15-19oz Nacho cheese soup
    1- large can kidney beans

Directions

1.Pre Heat over to 400 degrees.

2. In a large skillet over medium heat, combine the ground beef, onion, salt, pepper and parsley. saute for 10 minutes, or until the meat is browned and the onion is tender. Drain the fat.Stir in kidney beans, add one can of soup to the mixture. Set aside.

3. Mix tatertots with the remaining soup.

4. Spray a 8x11 casserole dish with pam, and use 3/4 of the tater tots mixture as a crust, lining the bottom and sides of pan with tater tots.

5. Add the ground beef filling to the tater tot crust, and top with remaining tater tots.

6. Bake covered in conventional oven for 45 minutes, or until headed throughly and top with grated cheese. Bake for additional 10 minutes, or until cheese is melted.

Cool and serve alone, or with sour cream and your favorite salsa.


Spinach and Ricotta Cheese Calzone

 Ingredients

    Crust:
    (1) 1/2 cups all-purpose flour, or more if needed
    1 envelope Fleischmann's® Pizza Crust Yeast
    1 teaspoon sugar
    3/4 teaspoon salt
    2/3 cup very warm water (120 degrees to 130 degrees F)
    1 tablespoon vegetable oil
    Filling:
    8 ounces Italian sausage
    2 cups fresh spinach leaves
    1/4 cup water
    3/4 cup ricotta cheese
    3/4 cup shredded mozzarella cheese
    1 egg
    1 teaspoon Italian Herb Seasoning
    1/2 teaspoon Crushed Red Pepper
    1/2 teaspoon Garlic Powder
    Pizza sauce (or substiute Marinara sauce)

 Directions

1. Combine 1 cup flour, undissolved yeast, sugar and salt in a large bowl. Add warm water and oil; mix well until blended (about 1 minute). Gradually add enough remaining flour to make a soft dough. Dough should form a ball and will be slightly sticky. (Note: Be sure to knead on a floured surface, adding additional flour if necessary. Dough should be smooth and elastic after about 4 minutes). Cover and allow dough to rest on floured surface while preparing filling.

2. Cook sausage in skillet over medium-high heat until thoroughly cooked. Remove from skillet and drain excess fat. Add spinach and water to skillet; sauté 1-2 minutes until spinach is wilted; drain. Return sausage to pan.

3. Combine ricotta, mozzarella, and egg in a mixing bowl. Stir in Italian herb seasoning, crushed red pepper and garlic salt; set aside.

4. To make calzones: divide dough into four portions. Roll 1 portion into an 8-inch circle on a floured surface. Spread approximately 1/3 cup ricotta mixture in center bottom half of dough. Top with heaping 1/3 cup sausage and spinach mixture. Be sure to leave outer ½-inch free of filling. Fold top half of dough over filling.

5. Pull edge of lower crust over top, folding and pressing layers together to form a seal. Carefully transfer to a greased baking sheet. Cut 3 to 4 vents in top. Repeat with remaining dough. Bake for 15-20 minutes until lightly browned.

6. Transfer calzone(s) to cooling rack to keep bottom crust crisp while cooling slightly. Serve with pizza sauce or other sauce for dipping.


Taco Bake

Prep Time: 40 minutes

Cook Time: 30 minutes

Yields: 8 servings

 Ingredients

    1 lb. ground beef
    1 packet Taco Seasoning
    1/2 onion
    4 tortillas
    12 oz shreaded cheese
    1 can salsa
    sour cream

Directions

    Fry beef, onions, and taco seasoning together.
    Pre-heat oven to 350°.
    Layer tortilla, meat, and cheese (4 layers)
    Top with salsa and cheese
    Bake for 30 minutes.

Let stand 3 minutes. Divide into 8 wedges. Serve with sour cream if desired.


Three Burn Chili

Prep Time: 1 hour

Cook Time: 2 hours, 30 minutes

Ingredients

    2 lbs. Ground Beef or Venison
    3 qt. Canned (or Crushed or Stewed) tomatos
    10 Tomatilloes
    4 cans Dark Red Kidney Beans
    10 oz. Button Mushrooms, Shredded
    10 tbs. Chili Powder (I like more, but...)
    8-10 oz. of Chopped onions
    8 tbs. Basil
    1 tbs. Chinse Mustard (condiment)
    1 tbs. Minced garlic
    6+ Sliced Jalapeño Peppers
    1/2 bar Dark Chocolate
    2 tbs. Black Pepper
    1 tbs. oregano
    3 Dashes of Pumpkin Spice, Ginger

Directions

Shred mushrooms, dice onions, and slice Jalapeños. Cut Tomotilloes into 8 sections.

Brown ground beef in skillet with onions, and 2 diced jalapeño peppers. While browning, cover the meat with pepper, 4 tbs. of chili powder and basil. Add dashes of other spices to taste (I use about 4 dashes each). Add Chinese Mustard and minced garlic. Break meat down to about the size of pea gravel or smaller while browning. When browned, add dark chocolate and stir in while melting. Do not allow chocolate to burn!

While the meat is browning, add tomatoes, kidney beans, shredded mushrooms, basil and 6 tbs. of chili powder to separate pot. Heat until a boil, then reduce heat.

When chocolate is melted, add browned meat to tomato mixture. Simmer for 2 hours (or longer). Stir often, so as not to scorch it on bottom of pot.


Sausage Salad

 Ingredients

    Potatoes
    Thyme
    Ground black pepper
    Salt
    Italian sweet sausages
    Green peppers
    Yellow peppers
    Orange peppers
    Onions
    Garlic
    Vinegar (to your liking)
    Olive oil

Directions

1) Take potatoes and dice them.

2) Then season them with the thyme, ground black pepper, and salt

3) Take the Italian sweet sausages, green peppers, yellow peppers, orange peppers, onions, garlic, olive oil, and vinegar and poor it all into one dish.

4) Now take the seasoned poatoes and poor them in the dish, too.

5) Cook for 2 hours, at 350 degrees Fahrenheit. 


Garlic Butter Shrimp

Prep Time: 10 minutes

Cook time: 15 minutes

Serves: 4 - 6 people

Delicious shrimp cooked in butter and garlic.
Ingredients

For Poached Shrimp:

    1 kilo large Shrimp
    1 liter of 7-Up
    1/2 tbsp salt

For Sauce:

    2 tbsp vegetable oil
    1 stick salted butter
    1 1/2 bulbs of garlic, minced
    3/4 tsp salt
    1/4 tsp black ground pepper
    3/4 cup Oyster Sauce

Directions

    Wash shrimp and remove the antennas (make sure not to behead the shrimp).
    Place washed shrimp in deep sauté pan. Add 7-Up and salt.
    Bring to a boil (approx 5-7 minutes in medium heat). Remove from heat, drain and set aside.
    Heat pan. Place oil, butter, and garlic and sauté for about 2 minutes. Mix in oyster sauce then season with salt and pepper.
    Mix in shrimp and coat with sauce evenly. Cook for about 3 minutes before the shrimp gets wrinkled.
