President Eisenhowers Favorite Cake Recipe
1/2 cup butter
2 cup sugar
3 eggs
1 cup sour milk
2 1/2 cups sifted flour
1 tsp. baking soda
1 rounded tsp. baking powder
2/3 cup cocoa dissolved in 1/2 cup boiling water
1/4 tsp. salt
1 tsp. vanilla
Sift flour, soda, baking powder & salt; cream the shortening,
slowly beat in sugar, add egg yolks & vanilla. Add cocoa, add flour
mixture alternately with the milk. Fold in stiffly beaten egg whites.
Pour into 2 greased layer cake tins. Bake 25 minutes in 375 degree
oven. Or: Use greased 9 inch square tin & bake 45 minutes @ 350 deg.
Seven Minute Frosting:
2 egg whites, unbeaten
1 1/2 cups sugar finely sifted
5 Tbsp. cold water
1/2 tsp. cream of tartar or 2 tsp. light corn syrup
Few grains salt
1 tsp. vanilla
Combine ingredients in top of double boiler; Stir until sugar
dissolves. Then place over briskly boiling water. Beat with egg beater
until stiff enough to stand in peaks 6 to 10 minutes. Add vanilla, beat
until thick enough to spread. During cooling, keep sides of double
boiler cleaned down with spatula. With an electric beater the process
may take as little as 4 min.
Banana Cake
Measure into mixer:
2 1/2 cups sifted flour
1 1/4 cups sugar
2/3 cup shortening
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. allspice
1/2 tsp. soda
1/2 cup any pancake syrup
2/3 cup bananas
Mix thoroughly at medium speed for 2 min. Then stir in 3 1/2 tsp.
baking powder, 3 eggs, 1/2 cup milk. Mix thoroughly at medium speed for
2 min. Pour into 9 inch layer cake pans. Bake @ 375 degrees for 35 to
40 min. Use butter frosting flavored with a few drops maple & put
an inch of chopped nuts around top.
Cheese Cake
18 graham crackers
3/4 of 1/4 lb. butter
2 Tbsp. sugar
3 1/2 pkg. cream cheese
3 egg yolks
3/4 cup sugar
1 tsp. vanilla
Topping:
1/2 pt. sour cream
3 Tbsp. sugar
1 tsp. vanilla
Mix graham crackers, butter & sugar, line greased 9 inch pie plate.
Mix cream cheese, yolks, sugar & vanilla. Fold in stiff egg whites.
Pour into lined pie plate & bake 30 minutes @ 350 deg. Apply
topping immediately after taking from oven. Spread with spoon. Place in
refrigerator for a few hours.
Cheese Cake (# 2)
1 lb. cream cheese
1 lb. cottage cheese
1 1/2 cups sugar
4 eggs
Juice 1/2 lemon
1 tsp. vanilla
3 Tbsp. flour
3 Tbsp. cornstarch
Combine above ingredients with electric mixer. Then fold in: 1 pt. sour
cream, 1/4 lb. butter, melted. Bake in spring form pan 1 1/4 hours @
325 deg. Leave in oven overnight or at least 3 hours without opening
oven door. A large, rich & delicious cheese cake.
Chocolate Icebox Cake
2 cakes German semi - sweet chocolate
2 Tbsp. sugar
4 Tbsp. water
4 egg yolks, beaten
4 egg whites stiffly beaten
1 tsp. vanilla
Place chocolate in top of double boiler over boiling water. Add sugar
& water. Melt the above, then add to this mixture the beaten egg
yolks. Stir until smooth & add vanilla & fold in beaten egg
whites. Pour this mixture into a loaf pan that has been lined with wax
paper & pieces of sponge cake. Place a slice of sponge cake on the
top & chill in refrigerator several hours or over night. Turn out
upside down on plate & frost all over with sweetened whipped cream.
Cover with chocolate shavings or sprinkles. This is a very old recipe -
it's simple to make & very delicious.
Coffee Cake
Sift together:
2 cups flour
3/4 cup sugar
2 tsp. baking powder
Pinch salt
Cut 1/2 lb. butter into above mixture until fine. Save 1/2 cup mixture
for top of cake. Beat 2 eggs well, add 1/2 cup milk & 1/2 tsp.
vanilla. Mix together, add to rest of ingredients & mix well. Pour
in tube pan, sprinkle crumbs on top & bake in moderate oven 1/2 to
3/4 hour. Nuts may be added if desired.
Crumb Cake
2 cups flour
1 1/2 cups sugar
2 tsp. baking powder
3/4 cup butter
1/2 tsp. salt
Mix into fine crumbs with hands & set aside 1/2 cup for the top.
Break 2 eggs into remainder of crumbs. Add 3/4 cup milk & beat
until light & creamy. Add 1 tsp. vanilla. Spread into shallow pan & put crumbs on top. Bake in 350 degree oven, about 1 hour.
Dream Cake
1 stick margarine (1/2 cup)
1/2 cup sugar
1/2 cup milk
3 egg yolks
1 cup Presto flour
1 tsp. vanilla
Mix batter, drain frozen strawberries & put berries over batter.
Beat egg whites until stiff, add 1/2 cup sugar. Put over batter &
strawberries. Bake in two 8 inch cake pans 325 deg. for 30 min. Ice
with pink whipped cream.
Dutch Apple Cake
4 or 5 apples, peeled & cut into eighths
9 inch square cake pan, greased only
Cake: 1 egg beaten
1/2 cup sugar
4 Tbsp. shortening
1/2 cup milk
1 1/2 cups flour, sifted
1 1/2 tsp. baking powder
Custard: 1 egg
1/2 cup sugar
1/2 cup milk
Mix ingredients for custard & keep for later use. Mix cake
ingredients in order named. Spread smoothly in greased cake pan. Press
in apples in even rows. Over this pour custard mixture & sprinkle
with nutmeg. Bake in moderate oven @ 350 degrees, about 45 minutes or
until apples are done. When using glass baking dish set oven @ 325
degrees & bake a little longer. Note: If cake is finished &
apples are not, cover cake & steam about 15 minutes more or until
apples are done.
Fruit Cocktail Torte
Sift: 1 cup sugar
1 cup flour
1/2 tsp. soda
1/2 tsp. salt
Add: 1 beaten egg
1 tsp. vanilla
1/4 tsp. almond flavoring
Mix well & add 1 medium can fruit cocktail (1 lb.) drained. Mix
well & pour into greased 9 by 9 inch tin. Over top spread mixture
of 3/4 cup brown sugar & 3/4 cup chopped pecans. Bake @ 300 degrees
for 1 hour. Serve with whipped cream or ice cream.
Jewish Coffee Cake
1/4 lb. butter or margarine
1 cup sugar
2 eggs
1 tsp. baking powder
1 tsp. baking soda
2 cups flour
1/2 pt. sour cream
1 tsp. vanilla
Topping: 1 cup chopped walnuts
1 Tbsp. brown sugar, light or dark
1/4 cup granulated sugar
1 Tbsp. cinnamon
Cream butter, add sugar, add eggs one at a time. Sift together baking
powder, soda, flour; add alternately with sour cream, vanilla. Divide
batter into layers. Spread 1/2 batter on bottom of tube pan. Add layer
of topping. Add second layer of batter & spread with remainder of
topping. Bake 45 minutes in 375 deg. oven.
Krumb Kuchen
2 cups sugar
1/2 tsp. salt
4 cups flour
4 tsp. baking powder
1 cup butter
4 eggs, separated
1 cup milk
Sift together sugar,
salt, flour & baking powder, add shortening & crumb well with
fork. Take out 1 cup of this mixture & to remaining mixture add
well beaten egg yolks & milk. Fold in stiffly beaten egg whites.
Pour into well greased pans & sprinkle top with cup of crumbs. Bake
in hot oven, 400 degrees, about 45 min. Sprinkle top with melted butter
& cinnamon when finished baking. Makes two 9 by 9 inch cakes. Very
nice served with fresh fruit.
Lazy Daisy Cake
2 eggs
1 cup sugar
1/2 cup milk
1 Tbsp. butter
1 cup flour
1 tsp. baking powder
1 tsp. vanilla
Pinch salt
Put milk & butter on to heat. Beat eggs well, slowly add sugar
& beat together once. Fold in sifted flour, salt & baking
powder. Add vanilla & hot milk. Pour in flat greased pan & bake
in moderate oven 25 min. While cake is baking stir up the topping & spread over warm cake. Put under broiler for 5 min.
Topping:
1 cup light brown sugar
1 cup shredded coconut
4 Tbsp. cream
1/2 cup butter
Melt all together in saucepan.
Merrie Companie Cake
2 3/4 cups sifted cake flour
2 tsp. baking powder
1 1/2 tsp. salt
1 3/4 cups sugar
1 cup shortening
Milk *
3/4 tsp. orange extract
3/4 tsp. almond extract
3 eggs & 1 egg yolk, unbeaten
* With butter, margarine, use 1/2 cup milk; with shortening, use 3/4 cup milk.
Measure dry ingredients into sifter. Stir shortening in bowl just to
soften. Sift in dry ingredients. Add milk & flavoring & mix
until flour is dampened. Beat 2 minutes, low speed. Add eggs & yolk
& beat 1 minute more. Scrap bowl & beater often. Bake 375 deg.
oven 1 hour or until done. Use tube pan. Very good served plain or iced.
Poor Mans Cake
2 cups sugar
8 Tbsp. shortening
2 cups water
1 pkg. seedless raisins
1 tsp. salt
2 tsp. cinnamon
1 tsp. cloves
1 tsp. nutmeg
2 tsp. baking soda
4 cups flour, sifted
1 tsp. baking powder
3/4 cup nutmeats
Put shortening into pan, add sugar, water, raisins, salt & spices,
boil 3 minutes, cool about 15 to 20 min. Add nutmeats, then mix in
flour, baking soda & baking powder; mix well. Put into 2 loaf pans
that have been greased & floured. Bake 50 - 60 minutes in 350 deg.
oven. One half of small jar of cherries may be added with flour. Will
keep for about a week to 10 days wrapped in foil.
Pound Cake
2 cups sugar
1/2 lb. butter
4 eggs
3 cups Swansdown cake flour
1/4 tsp. salt
1 tsp. baking powder
Juice 1/2 lemon
1 tsp. vanilla
1/2 cup milk
Cream butter & sugar. Add egg yolks, lemon & vanilla. Sift
& measure dry ingredients, add alternately with milk. Beat egg
whites & fold in. Bake in large tubular cake pan 1 1/4 hours @ 350
deg.
Scottish Fruit Cake
1/2 lb. butter or margarine
1 cup sugar
4 eggs
2 cups flour
1/2 pkg. seedless raisins
2 Tbsp. citron
Beat in a mixer or by hand. Cream butter & sugar, add eggs whole
one at a time. Add sifted flour, raisins & citron. Put into greased
& floured angel cake pan. Bake 275 degrees for 1 3/4 hours.
Angel Pie
3 eggs
1 cup sugar
14 graham crackers, finely crushed
1 tsp. baking powder
1/2 cup chopped dates
1/2 cup chopped nuts
Beat eggs & sugar until light & creamy. Add graham crackers
& baking powder, dates & nuts. Bake in 8 inch square pan,
greased & floured. Bake 30 to 35 minutes in a 350 degree oven.
Serve with whipped cream.
Peach Kuchen
2 cups sifted flour
2 Tbsp. sugar
1/4 tsp. baking powder
1/2 tsp. salt
1/2 cup butter or margarine
12 canned peach halves
1 cup light brown sugar
1 tsp. cinnamon
2 egg yolks
1 cup heavy sweet cream
In a bowl mix flour, sugar, baking powder & salt. With blender or 2
knives cut in shortening to consistency of cornmeal. Sprinkle mixture
over bottom & sides of a greased 9 inch pan. Place peaches cut side
up over dough. Combine brown sugar & cinnamon, sprinkle over peach
halves. Bake 400 degrees for 15 minutes, then mix the egg yolks with
heavy cream, pour over peaches & continue to bake 30 minutes longer
or until brown. Serve cold. Can be served with whipped cream.
Banana Cream Pie
1/2 cup sugar
1/3 tsp. salt
2 Tbsp. cornstarch
3/4 Tbsp. flour
2 1/4 cups milk
2 egg yolks, slightly beaten
3/4 Tbsp. butter
1 tsp. vanilla
2 bananas
Put dry ingredients in saucepan & stir
milk in gradually. Cook over moderate heat, stirring constantly, until
mixture thickens & boils. Boil one minute. Remove from heat. Stir a
little of the mixture into 2 large egg yolks, slightly beaten. Then
blend into hot mixture in saucepan. Boil 1 min. more, stirring
constantly. Remove from heat. Blend butter & vanilla. Cool,
stirring occasionally. Pour into cooled baked pie shell into which
bananas have been sliced & arranged on the bottom. Top with whipped
cream & garnish with ring of sliced bananas. Makes 8 inch pie.
Coconut Cream Chiffon Pie
1 Tbsp. gelatin
1 cup milk
3 eggs, separated
1/4 tsp. salt
1/2 cup sugar
1 tsp. vanilla
1 cup cream, whipped
1 pie shell
Coconut, toasted
Soak the gelatin in 1/4 cup cold milk. Heat rest of milk to scalding
over boiling water. Beat egg yolks & salt, then slowly add milk
mixture, stirring constantly. Return to double boiler & cook until
mixture coats spoon. Stir in gelatin until dissolved. Chill until it
begins to congeal. Beat egg whites until stiff, add sugar gradually.
Beat in milk mixture & flavoring. Fold in whipped cream, pour into
pie shell, cover with toasted coconut & chill 1 to 2 hours.
Chocolate Feather Pie
1 cup milk
1/2 lb. (30 to 32) marshmallows
Salt
1 tsp. vanilla
1 cup cream, whipped (1/2 pt.)
2 sq. Baker's bitter chocolate, shaved
1/2 cup chopped walnuts
Heat together milk & marshmallows, then cool thoroughly before
adding rest of ingredients. Put in baked pie shell & let stand
overnight in refrigerator. Before serving top with 1/4 cup coconut.
Makes large pie.
Date & Nut Pie
2 Tbsp. shortening
1 cup sugar
3 eggs
5 rounded Tbsp. flour
1 tsp. baking powder
1/4 tsp. salt
1 cup chopped nuts
1 cup chopped dates
Cream shortening, sugar & eggs. Sift flour & baking powder
& salt, add to creamed mixture then add nuts & dates. Put in 2
well greased small pie pans. Bake 45 minutes, @ 250 deg. Let stand
overnight or 8 hours. Cut in wedges & serve with ice cream.
Heavenly Pie
Meringue Crust:
2 egg whites
1/8 tsp. salt
1/8 tsp. cream of tartar
1/2 cup sugar
1/4 cup well ground nuts
1 tsp. vanilla
Beat egg whites until foamy, add salt & cream of tartar &
sugar, beat until stiff (high speed); add nuts & vanilla. Grease
pan lightly, spoon meringue into pan building up on sides. Bake 300
deg. for 55 min.
Filling:
3/4 cup white sugar
1/2 cup or 1/4 lb. butter
1 sq. melted chocolate
1 tsp. vanilla
2 eggs
Heat sugar & butter together until smooth, blend in melted
chocolate & vanilla. Add 1 egg & beat approximately 5 minutes @
medium speed, add 1 more egg & beat 5 more min. Chill for at least 1 hour. Serve with whipped cream. Garnish with shaved chocolate.
High Lemon Pie
4 egg yolks, beaten
1/2 cup sugar
1/4 cup cold water
1/2 tsp. grated lemon peel
1/2 tsp. grated orange peel
1/3 cup lemon juice
3 Tbsp. orange juice
1 env. unflavored gelatin
4 egg whites, stiffly beaten
1 - 8 inch baked pastry shell
Combine egg yolks, sugar, fruit juices & salt. Cook in a double
boiler stirring until thick. Add gelatin softened in cold water. Stir
until gelatin is dissolved. Add fruit peels then cool until partially
set. Gradually add 1/4 cup sugar to egg whites & beat until sugar
is dissolved. Fold into cooled mixture. Pour into baked shell until
firm.
Lemon Sponge Pie
2 Tbsp. lemon juice
1/2 tsp. grated lemon rind
1 cup sugar
3 eggs
1 cup milk
4 tsp. flour
1 Tbsp. butter
1 uncooked pastry shell
Cream butter & sugar, add flour, beat egg yolks & add to
mixture, add juice & lemon rind. When completely mixed add cup of
milk. Fold in beaten egg whites last. Bake in uncooked pastry shell for
10 minutes @ 450 degrees then 35 minutes @ 350 deg. Test as for custard
pie. This pie appears to have a cake top when finished.
Pecan Pie
1/2 cup butter
1 cup sugar
3 eggs, slightly beaten
3/4 cup dark corn syrup
1/4 tsp. salt
1 tsp. vanilla
1 cup chopped pecans
Prepare pastry & make an unbaked 9 inch pastry shell. Chill
throughly. Cream butter, Add sugar gradually & cream together until
light & fluffy. Add remaining ingredients & blend well. Pour
into pastry shell. Bake on lower shelf in a moderate oven, 375 deg. 40
to 45 min.
Pennsylvania Cheese Pie
1 large box cottage cheese
2 eggs
1 cup sugar
1/2 tsp. salt
Add milk to consistency of custard. Fill pie shell & bake until set & slightly brown on top.
Pumpkin Pie
9 inch pie shell
Filling: 3/4 cup sugar
1 Tbsp. flour
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 tsp. salt
1/2 tsp. ginger
1 1/2 cups cooked pumpkin, cooked & put through ricer
(Cheese pumpkin, flat kind)
1/2 cup milk
2 eggs, well beaten
Bake in hot oven 500 degrees for 30 min. Turn heat down at end of 30
minutes to 400 degrees & bake until knife comes out clean.
Pumpkin Pie (#2)
3 egg yolks, beaten
3/4 cup brown sugar
1 1/2 cups cooked pumpkin
1/2 cup milk
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1 env. unsweetened gelatin
1/4 cup cold water
3 egg whites, stiffly beaten
1/4 cup granulated sugar
Combine egg yolks, brown sugar, pumpkin, milk, salt & spice. Cook
in double boiler until thick, stirring constantly. Soak gelatin in cold
water, stir into hot mixture. Chill until partly set. Beat egg whites,
add granulated sugar & beat stiff. Fold into gelatin mixture. Pour
into pie shell, chill until set. Garnish with whipped cream. Yield: 1
large pie of 8 indivdual pies.
Sherry Cream Pie
1 1/2 cups chocolate cookies, crushed
1/4 lb. butter, melted
1 env. gelatin
1/4 cup cold milk
3 eggs, separated
1/2 cup sugar
1 cup milk
1/8 tsp. salt
1/4 tsp. nutmeg
1/2 cup sherry wine
1/2 pt. heavy cream
Mix crushed cookies with butter, pat into 10 inch pie plate up over
edges. Chill 1 hour. Soften gelatin in cold milk. Put egg yolks in top
of double boiler, beat slightly, add sugar, 1 cup milk, stir well &
cook 10 minutes or until mixture coats spoon. Take off stove, add
gelatin mixture, salt & nutmeg to custard. Stir until gelatin is
dissolved. Add wine slowly. Place in refrigerator. When mixture starts
to thicken, beat egg whites stiff & whip cream firm. Fold or
mix egg whites, then cream. Fill pie shell, sprinkle with crushed
cookies. Chill pie 8 hours.
Shoofly Pie
1 1/2 cups flour
1/2 cup sugar
1/8 tsp. salt
1/2 tsp. nutmeg
1 tsp. cinnamon
1 unbaked pie shell 9 inch
1/3 cup butter
3/4 cup dark old - fashioned molasses
1/2 tsp. baking soda
3/4 cup water
Sift together first 5 ingredients. Add butter, cut in with pastry
blender until entirely worked in flour mixture. Stir molasses, water,
baking soda together well. Pour molasses mixture into unbaked pastry
shell. Spoon crumbs all over top of liquid. Bake @ 375 deg. for 35 min.
