Bread, Rolls, & Cookies                         


Date & Nut Bread


Stand until cool:

1/2 lb. Dromedary pitted dates cut in fourths

1 1/2 cups boiling water

2 tsp. baking soda

Sift together:

2 1/2 cups all purpose flour

1 cup sugar

1/4 tsp. baking powder

1/2 tsp. salt

Add to first 2 mixed groups:

1 egg

1 tsp. vanilla

1 Tbsp. butter, melted


Then add 1 cup walnut meats cut in quarters. Bake in well greased loaf tin, 1 1/2 hours @ 350 degrees.


Nut Bread


1 egg

1/2 cup sugar

1 1/2 cups sweet milk

1 tsp. salt

3 cups flour

4 tsp. baking powder

1 cup chopped nuts


To a well beaten egg add sugar, milk & salt. Sift together flour, baking powder. Stir this into milk mixture, along with chopped nuts. Place in greased baking pan & let rise for 30 min. Bake in a moderate oven 40 min.


Yulekake - Norwegian Christmas Bread


1/4 cup lukewarm water

1 1-oz. cake compressed yeast or 1 pkg. dry yeast

1 tsp. sugar

1 cup milk

1/2 cup butter or margarine, melted

1/2 tsp. salt

1 tsp. crushed cardamom seed

3 cups sifted flour

2 eggs

1/2 cup chopped nuts

1 cup pieces candied orange peel

1 cup pieces candied lemon peel

1 cup raisins

1/4 cup butter or margarine, melted

1/2 cups sifted confectioner's sugar

2 Tbsp. cream


Mix yeast,  water & 1 tsp. sugar together & let stand. Scald milk & add 1 cup sugar, butter, salt & cardamom. Stir until lukewarm, add 1 cup flour & beat. Add yeast mixture, eggs & 1 2/3 cups of flour. Knead. If necessary, more flour may be added while kneading.  Let rise until double in size. Add 1/3 cup flour mixed with the fruit & knead again. Shape into 2 loaves. Place in buttered loaf pans 9 by 5 by 3 inches. Let rise until double in size. Bake in moderate oven, 350 degrees, about 50 min. Brush with melted butter. Cool, then remove from pan & frost with sugar & cream glaze.


Rice Muffins


1 egg

1 cup milk

1 cup cooked rice

1 1/2 cups flour

1/2 tsp. salt

4 tsp. baking powder


Beat egg, add milk & rice, mix thoroughly. Add sifted flour with salt & baking powder. Line muffin tins with bacon & fill 1/2 full with batter. Bake 30 minutes, 425 deg. Serve with fruit of jelly.


Brownies


3 sq. unsweetened chocolate

1/3 cup shortening

1 cup sugar

2 eggs, well beaten

1/2 cup flour

1/2 tsp. baking powder

1/2 tsp. salt

1 cup walnuts or pecans, chopped

1 tsp. vanilla


Melt chocolate & shortening together. Add sugar to well beaten eggs, combine the mixtures. Sift flour, add baking powder & salt, sift again. Add dry ingredients to egg mixture, add nuts & vanilla. Spread dough evenly in a greased square pan, 8 by 8 by 2 inches. Bake 25 to 30 min. in oven 350 deg.


Butter Thumbprint Cookies


14 oz. butter

3/4 cup sugar

3 cups flour

1 tsp. vanilla

1/2 cup ground nuts

Powered sugar


Cream butter; add sugar & continue to beat until light. Add vanilla. Add sifted flour & mix well; fold in ground nuts. Shape into small balls & place on an ungreased baking sheet. Make thumbprint in center of cookie. Bake in a moderate oven, 350 degrees, for 13 min. Remove from oven & place about 1/4 tsp. powdered sugar in center of each cookie. Return to oven for a few minutes until the sugar turns from white to yellow. Makes about 8 doz. cookies.


Date & Nut Cookies


1 1/2 cups brown sugar

2 eggs

3/4 cup butter or Crisco

5 tsp. hot water

1 level tsp. soda

2 cups flour

1 tsp. baking powder

1 cup chopped walnuts

1 cup chopped dates

Pinch salt

1 tsp. vanilla

 
Mix together all ingredients. Drop by teaspoon onto greased & floured cookie sheet. Bake @ 375 deg. For added attraction, put slices of maraschino cherries on top of cookies before baking.


Empire Biscuits - Cookies


1/2 lb. margarine

1/2 lb. butter

1 1/4 cups sugar

4 1/2 cups flour

3/4 cup corn starch


Put ingredients in large bowl & knead with hands until well mixed. Roll on floured board & cut in shapes to suit season. Bake on ungreased cookie sheet. When ready to use, put 2 cookies together with red raspberry seedless jam. Ice top & put 1/2 cherry on each. Oven, 350 deg. Time, 12 to 15 minutes.


Fruit Cookies


1/2 cup brown sugar

1/2 cup white sugar

2/3 cup butter

2 eggs

1 1/2 cups flour

1 tsp. cinnamon

1 tsp. soda

1 Tbsp. hot water

1 lb. dates

1 lb. pineapple, cherries, raisins & nuts

Pinch salt


Cream together butter & sugars, add eggs beaten whole. Sift together the flour, cinnamon & salt. Put soda in hot water & add to rest of ingredients, add fruits & nuts last; use extra flour on fruits & nuts. Drop by spoon on greased cookie sheet. Bake @ 325 degrees, 15 to 20 min.


Half Way Cookies


1/2 cup Crisco

1/2 cup sugar

2 egg yolks, beaten

1 Tbsp. milk

1 tsp. vanilla

2 cups all purpose flour

1/4 tsp. salt

1 tsp. baking powder

1/4 tsp. soda

1/2 cup chopped walnuts

1 7-oz. pkg. chocolate bits


Cream together shortening & 1/2 cup dark brown sugar, add eggs, milk & vanilla. Sift together flour, salt, baking powder & soda, blend with rest of ingredients. Spread evenly in a well grease 8 by 12 inch pan. Sprinkle over this walnuts & chocolate bits. Beat the 2 egg whites until stiff, add 1 cup brown sugar & spread over the cookies in pan. Bake 25 min. @ 325 deg. Let cool in pan before cutting.


Jacksonville Crisps


1/2 cup butter

1/2 cup brown sugar

1/2 cup granulated sugar

1 egg, beaten

3/4 cup sifted flour

1/2 tsp. baking powder

1/8 tsp. salt

1 tsp. vanilla

1/4 cup chopped walnuts

1 cup quick oatmeal

1 cup corn flakes


Mix all together, drop on greased pan. Bake 375 deg. 15 min.


Mexican Wedding Cakes


1/2 cup butter

1/2 cup shortening

1 tsp. vanilla

2 cups enriched flour

1 cup chopped walnuts

6 Tbsp. confectioner's sugar


Cream butter, shortening & vanilla; stir in flour & walnuts. Mix well. Shape in small balls, place on ungreased cookie sheet. Bake hot oven 400 degrees, about 10 min. Roll in confectioner's sugar while still warm. Store overnight before serving. Makes about 3 doz. cakes.


Mystery Bars


1/2 cup butter

1 cup all purpose flour

2 eggs

1 1/2 cups brown sugar

2 tsp. flour

1/4 tsp. salt

1/2 tsp. baking powder

1 tsp. vanilla

1/2 cup coconut

1 cup chopped nuts


Cream butter & 1/2 cup sugar, add 1 cup sifted flour & mix until crumbly. Put in buttered pan & bake until brown, 300 degrees for 20 min. Remove from oven. Beat eggs, add 1 cup sugar, vanilla, 2 tsp. flour, baking powder, salt, coconut & nuts. Spread on pastry & bake for 25 minutes more. Sprinkle with powdered sugar.


Walnut Spice Kisses


1 egg white

Dash salt

1/4 cup sugar

1 tsp. cinnamon

1/8 tsp. nutmeg

1/8 tsp. cloves

1 cup finely chopped walnuts


Beat egg white with salt until stiff. Gradually beat in sugar mixed with spices. Fold in chopped nuts. Drop from teaspoon on greased cookie sheet. Top with walnut halves & bake @ 250 deg.. 35 to 40 min. Makes about 2 doz.
